Quinoa Khichdi
Ingredients:

- 1/2 cup split yellow moong dal

- 1/2 teaspoon mustard seeds

- 1/2 teaspoon red chili powder

Instructions:
- Rinse the quinoa and moong dal thoroughly.
- In a pressure cooker, heat ghee over medium heat.
- Add cumin seeds and mustard seeds, let them splutter.
- Add onions and sauté until golden brown.
- Add tomatoes, carrots, and potatoes. Cook for a few minutes.
- Add turmeric powder, red chili powder, and salt. Mix well.
- Add quinoa and moong dal to the cooker and mix everything together.
- Add 3 cups of water and give it a stir.
- Cover the pressure cooker with its lid and cook for 3-4 whistles.
- Let the pressure release naturally before opening the cooker.
- Garnish with fresh coriander leaves.
