Fasolka po Bretońsku
Ingredients:
- 500g white beans
- 200g smoked bacon, diced
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 2 tablespoons tomato paste
- 2 bay leaves
- 1 teaspoon sweet paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups water
- Chopped fresh parsley for garnish
Instructions:
- Soak the white beans overnight in cold water. Drain and rinse.
- In a large pot, cook the diced bacon over medium heat until crispy. Remove bacon from pot and set aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
- Add the tomato paste, bay leaves, sweet paprika, dried thyme, dried rosemary, salt, and black pepper to the pot. Stir well to combine.
- Add the soaked white beans and crispy bacon back to the pot. Pour in the water and bring to a boil.
- Reduce heat to low and let simmer for about 1.5 to 2 hours, or until the beans are tender and the flavors are well combined.
- Remove the bay leaves and discard. Adjust the seasoning if needed.
- Serve hot, garnished with chopped fresh parsley.
