Ingredients:

  • 2 cups basmati rice
  • 1 cup ghee (clarified butter)
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon ginger paste
  • 1 teaspoon green chili paste
  • 1 teaspoon rock salt
  • 1/2 teaspoon black pepper powder
  • Handful of fresh coriander leaves, chopped

Instructions:

  1. Wash the basmati rice thoroughly and soak it in water for 30 minutes.
  2. In a large pot, heat the ghee over medium heat.
  3. Add the cumin seeds and allow them to splutter.
  4. Add the mixed vegetables and sauté for a few minutes until they are slightly cooked.
  5. Drain the soaked rice and add it to the pot along with turmeric powder, ginger paste, and green chili paste.
    Mix well.
  6. Add rock salt and black pepper powder to taste.
  7. Add 4 cups of water and bring it to a boil.
  8. Reduce the heat to low, cover the pot, and let the rice cook for about 15-20 minutes or until all the water
    is absorbed and the rice is cooked.
  9. Garnish with freshly chopped coriander leaves.
