Ingredients:
- 2 cups basmati rice
- 1 cup ghee (clarified butter)
- 1 cup mixed vegetables (carrots, peas, corn)
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon ginger paste
- 1 teaspoon green chili paste
- 1 teaspoon rock salt
- 1/2 teaspoon black pepper powder
- Handful of fresh coriander leaves, chopped
Instructions:
- Wash the basmati rice thoroughly and soak it in water for 30 minutes.
- In a large pot, heat the ghee over medium heat.
- Add the cumin seeds and allow them to splutter.
- Add the mixed vegetables and sauté for a few minutes until they are slightly cooked.
- Drain the soaked rice and add it to the pot along with turmeric powder, ginger paste, and green chili paste.
Mix well.
- Add rock salt and black pepper powder to taste.
- Add 4 cups of water and bring it to a boil.
- Reduce the heat to low, cover the pot, and let the rice cook for about 15-20 minutes or until all the water
is absorbed and the rice is cooked.
- Garnish with freshly chopped coriander leaves.
