Ingredients

  • 1 pound creste di gallo pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup cherry tomatoes, halved

  • 1 cup sliced carrots
  • 1 cup sliced bell peppers
  • 1 cup sliced mushrooms
  • 1/2 cup chicken or vegetable broth

Instructions

  1. In a large pot, bring water to a boil and cook the creste di gallo pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and onion, and sauté until fragrant and onions are translucent.
  3. Add cherry tomatoes, broccoli, carrots, bell peppers, and mushrooms to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender.
